Kensington Farm Market Celebrates Art Of Canning

PHILADELPHIA (CBS) -- An urban farm market and nursery in Kensington is celebrating the art of canning fruits and vegetables. Greensgrow, located in the 2500 block of Firth Street, is hosting the author of a canning book, and the event will include a demonstration.
You don't have to have a garden to can fruits and vegetables. Marisa McClellan, author of Food in Jars and the creator of a blog by the same name, will show you how at Greensgrow. She came up with her own recipes because of the limited space in her Center City apartment.
"Most of the recipes in my new cookbook yield 3-to-4 pints. So many of the old school recipes, they had yields of like 7, 8, 9, 10 pints, and for people who live in the city, in small houses or small apartments, that's too much," McClellan explains.
Right now, she's planning on canning strawberry jam, pickled asparagus, and in July, McClellan will be putting up her all-time first, blueberry jam, which she learned to make with her mother when she was growing up.
