It's National...Horseradish Month?

BUCKS COUNTY, Pa. (CBS) -- This is National Horseradish Month, and there's a regional reason to take that seriously.

The Delaware Valley is number two on the list in horseradish consuming says Eric Rygg, President of Kelchner's, the Bucks County grower and grinder of about 29% the nation's horseradish. Obviously, horseradish has zing—sometimes that's right up the nose zing—and Rygg says there's a reason it's different from pepper's persistence.

"Horseradish and wasabi and mustard will go into your nose, make your eyes water and then go away because it's airborne, so there's a little bit of a trick that we do, if you can breathe in through your nose and out through your mouth you'll get less of that crazy eye-watering," Rygg explains.

Right now, Kelchner's is introducing a spread, its first new horseradish product since 1938. Rygg says one customer suggested combining horseradish with peanut butter.
