Healthy Eating During The Holidays
Eating healthy around the holidays is a challenge for us all, but it can be especially difficult for cancer patients. However, there are a few rules we can all live by to make the holidays enjoyable—but healthful!

HEALTHY GINGERBREAD COOKIE RECIPE
Nonstick cooking spray ½ tsp. baking powder
1 ½ cup whole-wheat all-purpose flour ½ tsp. baking soda
¼ cup packed brown sugar 2 egg whites, lightly beaten
¾ tsp. ground ginger ½ cup buttermilk, skim
¾ tsp. ground cinnamon ½ cup unsweetened applesauce
½ cup light molasses
Preheat the oven to 350 degrees F. Lightly spray 8x8x12-inch baking pan with cooking spray. Set the pan aside. Stir together the flour, brown sugar, ginger, cinnamon, baking powder, and baking soda in a large bowl. Combine the egg whites, buttermilk, applesauce, and molasses in a small bowl. Add the buttermilk mixture to the flour mixture. Beat with an electric mixer until combined. Transfer the batter to the prepared pan. Bake for 30-35 minutes or until toothpick inserted in the center comes out clean. Cool on a wire rack for 10 minutes. Then remove from the pan and serve warm.
