This recipe is a wonderful island inspired dish, a chicken curry roti served with sweet and spicy pineapple salsa. Sue French worked diligently on it to improve it and make it more heart healthy. This is a delicious dish that has lots of fruit that is heart healthy. Make sure to use unsweetened coconut milk, not the thicker, sweetened variety available for drinks.
The crab is a great summery addition because it's still in season in this area and is low in calories and fat. Some people are nervous about curry, but after they try this recipe, they will love the flavors of the islands and the variety that this can add to a heart healthy lifestyle.
Serving curry wrapped up in a roti, or more available in America, a tortilla, makes it convenient to eat and gives a different presentation than traditional servings with rice.
