Cinco de Mayo may be a small holiday in Mexico commemorating Mexico's defeat of France, but here in the U.S. it's evolved into a huge celebration of the Mexican culture. One of Mexico's greatest contributions to America has to be the taco, consisting of a melange of savory goodness all nicely wrapped up in a tortilla. Whether you're celebrating Cinco de Mayo, or looking for the ultimate taco spot, these DFW taco places are the cream of the crop.

This 7th Street hidden gem serves up unique spins on traditional Michoacan cuisine that's created and cooked by the restaurant owner's family. The food selections range from ceviches to moles, but it's the tacos that reign supreme. The tacos come stuffed with a variety of ingredients, like beef, pork, fish and vegetables, but don't miss some of the unusual taco selections like the corn truffle (huitlacoche), duck and lobster. The taco with huitlacoche, a corn fungus that has an earthy flavor, is sauteed and served in tortillas with queso fresco — a dish you won't likely find in any other local taco shop. Other interesting selections include the taco langosta, featuring a lobster tail with caramelized red onions and the pato taco of seared duck breast with roasted poblano peppers. Everyone's favorite is the flavorful taco al pastor, with marinated pork shoulder that's been slow roasted to perfect tenderness and served with pineapple pico de gallo. Scott Wooley and his faithful truck, Woody, bring a taste of Southern California to DFW with a variety of meat and fish filled tacos and burritos. So Cal's tacos are so fresh and flavorful that even Tex Mex aficionados have become converts. Some of the tantalizing taco delights include the game changer, a honey chipolte grilled salmon taco with feta cheese and the San Diego classic, featuring a crispy panko crusted fish filet with cabbage slaw and cilantro ailoi. Finish it off with cinnamon sugar drenched sopapilla fries that come with a choice of chocolate, strawberry or honey to dip them in. You'll find So Cal rolling around the metroplex, from Fort Worth, Collyville and Las Colinas to Southlake and Grapevine. Just look for the red truck with a Hobie surfboard strapped to the side. You can also find So Cal opening soon near you when the company undergoes a national expansion starting early this summer.

Who said you couldn't find great tacos from an authentic Mexican taqueria in Plano? This little family-owned spot serves them up so well that people come from miles around to chow down on these tasty little morsels. An all time favorite, tacos a pastor, is made with marinated pork that's been slow roasted on a spit and slathered with adobe sauce before being cradled inside of soft tortillas with pineapple, lime and cilantro. The alambre cielito lindo is like a shish kabob without the skewer, featuring either chuleta (pork chops), pork shoulder, chicken or skirt steak cooked with bell peppers and served with onion and bacon. Pescado tacos are made with fresh tilapia and pico de gallo, or try the bistec con queso with thinly sliced steak and cheese. The selection of homemade salsas are the perfect compliment to the tacos, along with the taqueria's awesome guacamole. Get there between 3 and 7 p.m. and try them all for only $1 apiece, then wash it all down with a $3.50 margarita.

This tiny shack with bars on the windows, serves up street tacos that are so good that they made it onto Rachel Ray's list of the 64 best tacos in the country. Even before Ray visited, La Banqueta, formally El Guero, was a favorite dive for taco connoisseurs around the metroplex. The constant demand drove the owners to open up 2 more La Banquetas, one near White Rock and the other in Arlington. That being said, this is no gringo taco shop — these tasty tacos are as authentic as you can get, with offerings like tripe (a small intestine) which is best ordered duro, or crispy, suadero (brisket), lingua (tongue) and cabeza (head). At $1.35 apiece, you can't lose by trying them all and deciding for yourself if eating head, tongue and intestines aren't as strange as they sound.

Taco ladies Jeana Johnson and Colleen O'Hare, have conquered the town with gourmet tacos so creatively wonderful that the place was featured on the Food Network show, The Best Thing I Ever Ate. These huge taco concoctions, made up of fresh farm to table ingredients, change daily, but you'll usually find the famous Paris TX taco, the one featured on the show, on the menu. It consists of a wafer thin flour tortilla filled with tender hangar steak, crispy potatoes, cheese, spinach, egg and hollandaise sauce. Another favorite is the hotlanta taco that's an innovative take on fried chicken and waffles. The Hotlanta consists of a waffle-battered chicken breast with sweet potatoes in honey butter all tucked inside of a griddled tortilla. Another popular pick is the Greek inspired Glutton for Mutton taco — filled with grilled leg of lamb, pearl couscous, tomato salad, arugula, feta cheese and tzatziki sauce. Vegetarian options are also inspiring, like the choppin brocco-lay with caramelized broccoli, onions, roasted red bells, cheese and grains.
