Shawn Haygood, a Pleasant Grove native who believes that bacon is a food group and eats vegetarian every Sunday, incorporates fresh, local ingredients to the dishes he creates -– which include charred baby back ribs, shrimp 'n grits and a Roadhouse classic of chicken fried steak. The chicken fried steak starts with tenderloin which is cut into three, two to 2.5 ounce medallions, which you can order rare, medium or well-done, cooked in a cast-iron Dutch oven instead of a deep-fryer and comes with buttermilk whippers (light and fluffy "mashed" potatoes with roasted garlic and shallots) and bacon braised green beans with charred poblano gravy. Finish your dinner with tableside s'mores with completely house made ingredients including chocolate, cinnamon graham crackers and a variety of marshmallow flavors: maple, cotton candy, coffee, coconut and orange (which change weekly).
