Allen Martin's Thanksgiving Mac 'N Cheese Recipe

SAN FRANCISCO (CBS SF) – Thanksgiving is the time of the year when we appreciate our loved ones by gathering together the family and the putting together an incredible Thanksgiving meal.

Our friends at KPIX 5 have shared their best recipes for the holiday season. Featured is KPIX 5 Anchor, Allen Martin's amazing Mac 'N Cheese meal:

INGREDIENTS:

For The Topping:
2 Tablespoons unsalted butter
2 Tablespoons olive oil
2 cups breadcrumbs
2 large garlic cloves, minced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt

For The Macaroni And Sauce:
1 pound dried elbow macaroni
1 stick unsalted butter
6 Tablespoons all-purpose flour
4 1/2 cups milk
3/4 cup cream
6 cups grated extra-sharp cheddar cheese
1 cup grated Parmesan cheese
1 Tablespoon salt
1/2 teaspoon ground white pepper
1 1/2 tablespoons mustard powder

Directions:
Heat oven to 400°F
Place rack in the middle of the oven
Butter a 9 X 13 baking dish.
Boil water in a large covered pot for the macaroni.

For the topping, in a large skillet over medium heat, melt butter and add oil to heat.
Add breadcrumbs and garlic. Stir together and cook until crumbs are golden brown, 4 to 6 minutes.
Put crumbs in a medium bowl and stir in 1/2 cup Parmesan and salt, and set aside.

Add macaroni to boiling water and cook until just soft - don't overcook it.
Drain macaroni and set aside.

In a large wide pot over medium-low heat, melt the butter. Sprinkle flour over butter and whisk together.
Cook, stirring constantly with a wooden spoon, until mixture is light golden, about 4 minutes.
Gradually pour in milk and cream, whisking constantly.
Raise heat to medium-high and bring sauce to a low boil, whisking constantly.
Reduce to a simmer, whisking occasionally, until sauce is thick and coats the back of a spoon, about 3 minutes.
Add the salt, pepper, and mustard powder.
Add the cheeses in three batches, whisking until each addition is completely melted before adding more.
Add the drained macaroni to the pot with the cheese sauce and stir well to coat.
Transfer macaroni mixture to the buttered baking dish and place on a rimmed baking sheet.
Sprinkle topping evenly over macaroni and bake until golden and bubbling, 20 to 25 minutes.
Let cool 15 minutes before serving.
