Late Night Tailgating: Pan-Seared Steaks & Buckeyes

These great recipes from Chef Anthony Marino will be a delicious treat for your friends at your next tailgate party!

This week on "Steelers Late Night," Chef Anthony is making Pan-Seared Steaks!

STEELERS LATE NIGHT "Late Night Tailgating Recipes": Pan-Seared Steaks & Buckeyes

Pan Seared Steaks

Served with a creamy blue cheese and roasted Yukon potatoes

Ingredients:
4ct 8 to 10 oz NewYork strip steaks 3oz salted butter 1oz olive oil

Salt pepper T.T. 5# Yukon gold potatoes quartered 3oz stone ground mustard 1oz cider vinegar 3oz shaved parmesan cheese salt , pepper tt. 4 oz blue cheese dressing 4 oz crumbled blue cheese 2 red onions sliced 1 green peeper sliced

Method:

  1. Remove steaks from fridge and bring to room temperature.
  2. Meanwhile heat a heavy bottom skillet add olive oil until ripples appear
  3. Next pat steak dry with paper towel and season, immediately place in skillet to sear.
  4. Sear for about 90 seconds on the side to ensure even browning next flip with tongs and add a tab of butter for richness.
  5. Finish in a 350 degree oven until you reach your desired doneness
  • Toss quartered potatoes in mustard and oil with salt and pepper
  • Place on sheet tray and roast for 35 minutes on 350 degrees until tender .
  • Remove and toss cheese and adjust seasonings

To Serve:
Place roasted potatoes on plat serve alongside steak and top with blue cheese and chives.

Buckeyes

Ingredients:
1 1/2cups peanut butter 6 cups confectioners' sugar 1 cup softened butter 4 cups semi sweet choc ½ teaspoon vanilla

Method:

  1. In bowl mix together the peanut butter, vanilla and confectioners sugar.
  2. Roll into 2 in balls , and chill in freezer until firm about 30 minutes
  3. Melt chocolate over double boiler
  4. Dip peanut butter balls into chocolate holding with toothpick until resembling a buckeye
  5. Place on a cookie sheet or parchment until firm.
  6. Refrigerate until serving

Chefs Note: This recipe is basic, what sets it apart is the quality of ingredients high quality ones set the dessert apart from the normal.
