Tony's Table: Tortellini & Peppers
Ingredients:
3 links Italian sausage
3 oz. red bell peppers, cored and diced
3 oz. green bell peppers, cored and diced
3 oz. yellow bell peppers, cored and diced
3 oz. orange bell peppers, cored and diced
1 Italian hot pepper, chopped
1 medium tomato, sliced and diced
3 cloves garlic, chopped fine
3 oz. olive oil
8 oz. tortellini
Prepare Pasta:
- Add tortellini to a pot of salted boiling water
- Cook until they float, about 6-8 minutes
- Reserve about 2 oz. of the water when done
Prepare Meat:
- Remove sausages from their links and cut into small pieces
- Heat a small amount of olive oil in a deep saute pan, then add sausages
- Once browned, remove from pan and set aside
Prepare Peppers:
- Degrease saute pan, then heat the rest of the olive oil over low heat
- Add garlic and cook until it's translucent and slightly browned
- Add salt, pepper and red pepper flakes to taste, then add diced bell peppers
- Saute 6-7 minutes, then add diced tomato and browned sausages along with the reserved pasta water
- Add cooked tortellini and stir to combine
- Allow to simmer for about 2-3 minutes, then serve
