Stephanie & Tony's Table: Angel Hair Pasta With Beans
Angel Hair with Beans
Ingredients:
2 cups angel hair pasta
15 oz chick peas
15 oz cannellini beans
12 oz san marzano tomatoes
1 red tomato, sliced
1/4 cup mint
2 oz extra virgin olive oil
Red pepper flakes
Directions:
Cook pasta according to directions on package. When al dente, remove, strain, and keep pasta water. Drizzle olive oil on pasta to prevent sticking.
heat up pan with 1 oz extra virgin olive oil, add in both beans, and San Marzano tomatoes. Cook together for 5 minutes, adding in spoonfuls of pasta water as you go.
Add in pasta, red tomato, and an additional 1/4 cup of pasta water and stir together for an additional minute. Then add in mint, and red pepper flakes.
