Kosher Cooking For Chanukah: Apple Fritters Dipped In Chocolate
NEW YORK (CBSNewYork) -- Many in the area are celebrating Chanukah - also called the Festival of Lights - and that means celebrating traditional Jewish cuisine.
To give us a taste of some holiday favorites, Chef David Kolotkin hit The Couch to share his recipes. He showed us how to make apple fritters dipped in chocolate, along with spiked apple sauce.

Apple FRITTERS (Garnish for 4 servings):
1 large eggs, beaten
⅝ cup cold non dairy creamer
1 ½ tbsp light brown sugar ¼ tsp cinnamon
½ cup flour
1 pinch baking soda
Vegetable oil
2 ripe Apples
METHOD
1 In a bowl, beat the eggs with a whip. Stir in the creamer.
2 In a separate bowl, combine all the dry ingredients.
3 Stir the wet into the dry, mixing out any lumps.
4 In a small sauce pot (½ gallon), add ½ vegetable oil and heat to 375 degrees. hot oil can be very dangerous, don't let it heat to much and if it starts smoking remove from fire and let it cool for a bit.
5 Take the core out of the apple, skin can be left on or removed, it is your choice. If you choose to leave it on, then make sure the fruit is washed well. Cut into ¾ wedges.
6 Dip the apple wedges into the batter until they are evenly coated in batter, then fry until golden brown.
7 When golden brown (approximately 30-60 seconds), remove and place on a clean towel to remove any excess grease.
8 Dip in melted chocolate
HANNUKAH SPIKED APPLE SAUCE
Time: 1 hour Serves 4-6
4 Granny Smith Apples, skinned, seeded, cored, cut into 1/8ths
1 tsp cinnamon
2 tsp vanilla extract
¼ cup cayenne (optional)
¼ cup Dark Rum (Abuelo Anejo is nice)
METHOD
1. Preheat oven to 325
2. Combine all ingredients into a heavy gauged sauce pot ( Apples should be spread out in one even layer).
3. Bake uncovered in 325 oven for 45 minutes to 1 hour. Apples should be very soft.
4. Either mash with a fork for a rustic feel or puree in a food processor until smooth.
