Newcomer Madison and Main is offering one of our favorite soft shell crab plates this season. Owned by seasoned restaurateur Michael Gluckman and partner Eric Miller, the restaurant's soft opening earlier this season was the delight of locals and the Manhattan to Hamptons summer crowd. Madison and Main promises to be a popular choice for diners all year long in the hopes of becoming a neighborhood classic, rather than a trendy seasonal restaurant. Sag Harbor is known for a New England vibe, unlike the various "sceney" towns around the Hamptons. Dine at Madison and Main for a relaxing meal any time of year.

New Yorkers who left their hearts in New England will fall hard for Butler's Flat, a newly opened clam shack on Manhasset Bay in Port Washington. Nestled on the Brewer Capri West Marina, the restaurant is owned by Christopher Blumlo, managing partner at Tribeca's Marc Forgione restaurant, who wanted to bring the taste of his Massachusetts hometown to New Yorkers living or vacationing in the Hamptons. Go for the Stuffed Quahog, Fried Ipswich Clams and New Bedford Scallops when dreaming of a summer on Cape Cod.
Summer is prime season for pop-ups, like the BLT Steak pop-up restaurant at The Capri, which will be around until Labor Day. The menu at this resort bistro will feature BLT Steak's signatures from their famed popovers, tuna tartare and chopped vegetable salad to classic steaks, sautéed Dover sole and peanut butter chocolate mousse. Or choose from a selection of small plates from the pool and patio menu to enjoy while relaxing in the sun, including East & West Coast oysters, lobster cobb salad and a seafood platter for one, two or three.
Red Hook Lobster Pound has teamed up with lemonade start-up Sweet 'tauk for a seafood shack and refreshments shop in Montauk, offering lunch and dinner this summer. From their famous rolls to Lobster Caprese and clam chowder, this is the go-to spot for casual seafood in the Hamptons this summer. Make sure to cool down by sipping on raw-agave-sweetened lemonades and homemade ice pops for the perfect summer seafood pairing.
The Hamptons aren't just for skinny eats and fresh seafood. Chicken and waffles have been working their way into the trendiest New York establishments -- and now the deliciously indulgent regional dish has landed on the Hamptons scene this summer. Austin, Tex., favorite Lucky J's is opening Montauk. Try their famous Waffle Tacos or breakfast plates served all day long, for comfort food feasting by the sea.
Chef Sam Talbot may have left Montauk's Surf Lodge last spring, shortly after leaving SoHo's Imperial No. 9, but he's now back in action out East by partnering with Zach Lynd of Turf, a popular truck parked at Ditch Plains beach, which opened in 2011. This may not be a new restaurant, but Sam Talbot's arrival marks a whole new bikini-friendly menu full of fresh juices and salads for the summer of 2013.
