Van der Sloot is charged with killing Flores in his Lima hotel room a year ago after meeting her at a casino.
Ricardo Flores encountered van der Sloot at the Castro Castro prison Wednesday for what was to have been a hearing before the suspect's pending trial.
The hearing was postponed because no defense lawyer showed up.
"It was a very tough moment," Flores told CNN shortly after leaving a courtroom inside the prison. "I thought I'd see someone skinny ... but no, he was fatter than when he first went to prison," Flores said.
According to CBS affiliate WIAT, van der Sloot's previous attorney, Max Altez, quit the case last month citing differences in defense strategy. Radio Netherlands Worldwide indicates there was also an issue of Altez not being paid.
Van der Sloot reportedly confessed he killed the 21-year-old student after she found material relating to Natalee Holloway on his laptop computer.
Stephany Flores' was found in van der Sloot's Lima hotel room five years to the day after Albama teen Natalee disappeared while on vacation in Aruba. Although van der Sloot is considered the prime suspect in the Holloway case, he was never charged by Aruban authorities.
