MNfusion: Rustica To Open Cookie Shop At Mall Of America
Sweet tooths will soon have a new reason to visit the Mall of America.
This winter a new ice cream and cookie parlor is opening on the mall's lower level -- Rustica Cookies & Creamery.
Rustica Cookies & Creamery is a partnership between Rustica Bakery owner Greg Hoyt and Ben Spangler.
Hoyt, who co-founded Dogwood Coffee, overtook the bakery when co-owners Steve Horton and Barbara Shaterian stepped down. Horton and Hoyt had previously been business partners in a few ventures.
Rustica Bakery has gained a cult-like following for its cookies, and will be bringing the same recipes to the Mall of America location.
Spangler comes to Cookies & Creamery after helping to create the incredibly popular Milkjam. He played a role in creating some of the original flavors found at the specialty ice cream shop, and will be bringing his ingenuity to the role of Head Chef.
"Ben's experience in creating out-of-the-box flavors that grab people's attention speaks for itself," Hoyt said in a recent press release. "Our cookies & creamery concept gives Ben an opportunity to experiment with cookies and soft serve flavors that will comfort yet excite."
There will be new flavors of cookies and ice cream, and, of course, a variety of other dessert options.
Rustica Cookies & Creamery will open on level one, north. It is set to open this winter.
Rustica Bakery's flagship location will remain in Minneapolis' Calhoun Village Shopping Center.
