Mama V's Chicken Soup
Frank Vascellaro and his mother Rosalie head to the kitchen to make some chicken soup. Check out the recipe below.
Ingredients:
64 ounces of water
3-4 chicken breasts
3- Tablespoons beef bouillon granules
1-cup carrots
1-cup celery
½ - large onion
¼ -cup fresh parsley
1-tablespoon salt
1- 8 ounce can tomato sauce
1-package Acini de Pepe macaroni
Directions:
Place water in a large pot. Wash chicken breast and place in water. Cook chicken breast on stove for 15 minutes. If some chicken 'scum' rises to the top remove it with a slotted spoon. After removing scum add beef bouillon.
Cut carrots, celery, onion and parsley and add to pot.
Add salt.
Add can of tomato sauce.
Cook on stove on low heat at least 1 and 1/2 to 2 hours.
In a separate pot, add two quarts of water, bring to boil and cook Acini De Pepi according to package instructions until cooked. Strain after cooking.
Add Acini De Pepe to large soup pot before serving.
