Eagan Student Stirs Up Lunch Menu With Research Project
MINNEAPOLIS (WCCO) -- Erik Hillesheim, a senior at Eagan High School, worked with Schwan's Food Service to develop a research and marketing project for the school's lunch program.

"It's a chicken stir-fry, it's served over vegetable fried rice," Hillesheim said.

The school's mentor program, which Hillesheim is part of, allows students to determine what their interests are to better direct them on their academic and professional life.
Hilleshieim worked with Pat McCoy, of Schwans.
"[The program] allowed him to understand firsthand some of the realities of real life. But it also allowed him to interact with the school here and understand school nutrition." McCoy said.
Hillesheim applied his research and sales training to identify a new menu item for his high school cafeteria.
Judging from the reaction of students, it was a success.
