DeRusha Eats: Get Grilling Tips From Dr. BBQ
MINNEAPOLIS (WCCO) -- Ray Lampe writes cookbooks, wins grill competitions and is Dr. BBQ.
The doctor and Jason DeRusha spent some time over charcoal in Minneapolis at last weekend's Minnesota Monthly GrillFest.
When asked what are amateur grillers' No. 1 mistake, he said it's applying barbecue too early.
"If you put barbecue sauce on in the beginning, it's going to burn up long before it's cooked," he said.
Lampe recommends using a thermometer to ensure the meat doesn't get overly crisp, so when the temperature reaches 145 degrees internally, that means it's time to take it off and let it sit, tented in foil for 10 minutes.
