Chef Eli Renn Shares Recipe For The Super Burger
MINNEAPOLIS (WCCO) – Now that the holidays are over, most people are focusing on eating better.
But that can be hard to maintain when you're craving things like burgers.
So, Chef Eli Renn from the Gold Nugget Tavern in Minnetonka shares his recipe for a Super Burger. A burger that is gluten free, made from super foods and is delicious.
"We came up with this burger because after the holidays no matter what your resolution we all need to take a little bit of a break or just make some changes," Renn said. "I wanted a burger that first off was delicious, and could fit into most diets, as well as make you feel good about eating it."
The burger includes salmon, lime pomegranate salsa, avocado, kale and a pumpkin seed vinaigrette all on top of a gluten free bun.

Pumpkin Seed Vinaigrette
Ingredients
1 tablespoon roasted garlic
2 tablespoons chopped shallot
3 tablespoons pumpkin seeds
2 tablespoons orange juice concentrate
3 tablespoons apple cider vinegar
2 tablespoons olive oil
2 tablespoons pumpkin seed oil
1/2 teaspoon Worcestershire sauce
2 tablespoon cold water
Salt to taste
Directions
Wrap garlic in foil and roast in 350 degree oven, for about 10 minutes. Put roasted garlic, shallots, pumpkin seeds, OJ concentrate, and cider vinegar in blender and blend on high for about 2 minutes. Slowly add additional ingredients. Taste and salt. Toss with kale last minute.
Lime-Pomegranate Salsa
Ingredients
1 cup pomegranate arils
1/4 of a red onion thinly sliced
3ea. freshly squeezed limes, juice only
1 tablespoon olive oil
1 ea. green apple cored and cut into matchsticks
Salt to taste
Directions
Mix all ingredients.
Mashed Avocado
Ingredients
3 ea. avocados
1 ea. freshly squeezed lime juice only
Salt to taste
Directions
Take pit out and skin off, and mash avocado with lime juice until smooth.
