Bite Of Minnesota: Lemon Roasted Salmon
Meet my new go-to salmon recipe -- all you need (besides salmon and an oven) is a spritz of lemon juice, a pinch of salt and pepper and a bunch of green onions. This is a spruced up version of the salmon recipe I usually make with just salt, pepper and olive oil and I love the addition of fresh lemon juice and green onions.
Salmon has so many health benefits; I should be eating it more often. It's quick and easy to prepare, too, so add this recipe to your arsenal and start absorbing those Omega-3 fatty acids.
Lemon Roasted Salmon with Green Onions
(Serves 4)
4 4-ounce salmon filets
Salt and pepper
1/2 lemon
1 bunch green onions (scallions), trimmed
Preheat oven to 450 degrees. Place salmon skin-side down in a baking dish and sprinkle with salt and pepper. Bake for 7 minutes, remove from oven and squeeze fresh lemon over filets. Lay green onions (reserve one for garnish) over salmon and return to the oven for another seven minutes or until salmon flakes easily with a fork. Peel away salmon skin and serve, garnish with sliced fresh green onion. Serve with steamed brown rice and a simple green salad.
