TOTT: Sunny Isles Eatery Offers Patrons Clean Eating Cuisine
SUNNY ISLES (CBSMiami) -- At first glance, the new 120-seat bistro named Basil Park, looks like a chic modern eatery in the center of Sunny Isles and it is.
Look deeper and you'll see it serves up a lot more or should we say a lot less?
Chef Tim Andriola whose spent years as head chef next door at its sister Italian restaurant, Timo, designed this clean menu after attending nutrition classes.
"It really broke down food in a scientific way and how it reacts in our bodies . It's basically food that is really good for you and food that is not so good for you," said Chef Tim.
Whether it's the fresh pressed juices, the two day brined rotisserie chicken , or any dish on the menu, Basil Park is all about clean food.
"Basically it's intact cuisine. That is food stuff that is not processed . No sugar, no flour very minimal dairy and no gluten," said Chef Tim.
Chef Tim prepares poached tiger shrimp spring rolls with raw fresh veggies in a special dressing.
Even the complimentary water is good for you. They serve up Kangun water. It is the official water in over 90 percent of homes in Japan.
"What it does is it separates the water molecules," Tim explained. " It puts the acid on one side and alkaline on the other and their whole philosophy is that you drink the alkaline and wash yourself with the acid. So, it's PH balanced and good for you."
From the water to the food.
CBS4's Lisa Petrillo started off her tasting with the avocado ceviche. It's basically lime juice, coconut juice and herbs.
Next on the list was the shrimp roll Chef Time served up with the moistened brown rice paper.
Once Petrillo tasted it, she said "An explosion of flavors and crunch and the rice paper feels like you're having a sandwich. But you know its only rice paper so it's really good."
To wrap up the tasting, a rotisserie chicken was served. It's brined for two days and is a mouthwatering dish even before you taste it. Petrillo referred to the dish as, "one of the best pieces of rotisserie chicken I've ever had."
