CBS4's Lisa Petrillo joined Chef Jay Suggs for this cooking segment from Norman Brothers Produce.
Chicken Fajitas
Ingredients:
- 6 flour tortillas
1 rotisserie chicken
1 Spanish onion
1 red bell pepper
1 cubanelle pepper
1 small can diced green chilies
4 oz shredded cheddar cheese
4 oz shredded jack cheese
RECIPE
- Debone the chicken.
- Slice the onions and peppers. Sauté them and set aside.
- Heat a pan over a medium high heat.
- To assemble the fajita. Place a tortilla on your work surface cover with a sprinkling of the cheeses. Then add the peppers and onions, chicken and more cheese top with another tortilla.
- Put the fajita in the pan and place a weight on top to make everything come together. when the tortilla is golden brown flip it and brown the other side.
Smoked Salmon Stuffed New Potatoes
Ingredients:
- 2 dozen new potatoes
- Creme fraiche
- 4 oz Smoked salmon
- 1 bunch of chives
RECIPE:
- Cut the ends off of a new potato, then slice through the middle of the potato.
- Scoop out some of the potato to make a bowl. A teaspoon measuring spoon works great for this.
- Place the potatoes on a baking sheet bowl side down and bake at 350 for 10 minutes or until the potato has a little give to it.
- Cool thew potatoes completely.
- Fill a pastry bag with creme faiche and pipe it into the potatoes.
- Slice a thin strip of smoked salmon and roll it up. Place it on the creme fraiche and garnish with chive sprigs.
Heirloom Cherry Tomato Bruscetta
Ingredients:
- 1 Baguette
- 1 lb assorted tomatoes
- 1 bulb garlic
- 1 bunch basil
- 1 wedge Parmesan cheese
- Olive oil
- Salt & pepper
RECIPE:
- Cut the tomatoes into small bite size pieces.
- Combine the tomatoes, minced garlic, olive oil, salt and pepper to taste.
- Garnish with some freshly chopped basil.
- Serve on a baguette with a thin slice of Parmesan
