Dine On A Dime: Casa Vega
SHERMAN OAKS (CBS) — It has been a Sherman Oaks institution for over 55 years where family traditions are at the heart of every meal.
Casa Vega, 13301 Ventura Blvd., is a family owned restaurant featuring generations-old Vega recipes of delicious traditional Mexican cuisine. The famous San Fernando Valley eatery opened its doors in 1956.

Tortilla Soup
2 oz canola oil
1/2 cup white onion
1 tbsp chile paste
1/2 tsp cumin, garlic powder, dried oregano and salt
1/4 tsp white pepper
2 cups diced, grilled chicken breast
1 cup tomato sauce
1 liter water
1/2 c chicken broth
1 avocado- large diced
Tortilla chips or strips
Crumbled cotija cheese
-- heat oil. Add onion and cook until translucent. Add chile paste and spices. Toss in diced chicken and tomato sauce. Next pour in water and chicken broth. Top with diced avocado, tortilla strips and cotija cheese.
Guacamole
3 avocados
1/2 c white onion
1/2 c diced tomatoes
1 jalapeño
1/2 tsp salt
Squeeze of lime juice
Cilantro to taste
Peel, pit and mash avocado. Add salt and mash a little more. Next add onion, tomato, jalapeño, lime juice and cilantro. Mix well.
Tortilla Chips
Canola oil
12 Corn tortillas cut into 4's
Add oil in large frying pan so that it is 1/2" high. Bring to a boil. Add in tortillas and fry until lightly golden. Drain on paper towels
