Winning Soup Recipe Has Palatine Girl Headed To White House
(CBS) -- A 12-year-old girl from Palatine is going to the White House to meet First Lady Michelle Obama and as CBS 2's Mai Martinez reports, her winning recipe has an Illinois connection.
12-year-old Tess Boghossian loves to cook and now her skills have landed her a ticket to the White House as one of the 54-winners of this years' "Healthy Lunchtime Challenge" contest. She'll even get to meet First Lady Michelle Obama.
"I was so excited because this is something every parent dreams will happen for their child. We tell them all the time 'Be yourself. Be yourself,' and she did just that and she's being rewarded in the most amazing way," said Debbie Boghossian, Tess' mother.
Tess' winning recipe is Lincoln's Inaugural Soup, a chicken soup chock-full of vegetables.
"Abraham Lincoln is my favorite president, so I found this recipe they had at his inauguration and I made it healthier," said Tess.
Now that she's mastered the recipe, Tess is looking forward to meeting the Mrs. Obama.
Her big day at the White House isn't until Friday and her mother will be going with her. Tess' little sister Emma has been so inspired by all this, she wants to enter the contest next year.
Lincoln's Inaugural Soup Recipe:
Makes 4 servings
Ingredients
2 tablespoons olive oil
1 small onion, peeled and diced
1 small parsnip, peeled and chopped
½ cup chopped green beans
1 carrot, peeled and chopped
1 quart low-sodium chicken broth
½ cup cooked quinoa
1 cup chopped asparagus (tough ends discarded)
8 ounces canned white beans, rinsed
½ cooked rotisserie chicken, skin removed, and chopped or 2 cups skinless boneless cooked chicken, chopped
1 quart low-sodium chicken broth
¼ teaspoon salt
¼ teaspoon pepper
Preparation
In a large pot, warm the olive oil over medium-high heat. Sauté the onion for 4 minutes or until soft. Add parsnips, green beans, and carrots, and continue to cook for 5 minutes, stirring occasionally. Add chicken broth, bring to a boil and then add quinoa. Cover and simmer for 10 minutes. Add asparagus, white beans, and chicken, season with salt and pepper, and cook for 5 minutes more, or until the chicken is heated through.
