CHICAGO (CBS) -- A serving of corned beef comes with a whopping 1,500 mg of sodium. That's almost more salt than a person should have all day.
Top that off with some salted potatoes, buttered cabbage and wash it down with beer and you've got a caloric bomb on your hands. CBS 2's Suzanne Le Mignot found some people making a St. Patrick's Day feast the healthy way.
In place of corned beef, Rush University Prevention Center registered dietician Jennifer Ventrelle was serving up pork tenderloin.
Ventrelle was teaching her students in the ELM class how to prevent heart disease and diabetes through nutrition. ELM stands for Eat well, Love better and Move more.
The cabbage was made with white wine and sliced apples. The potatoes weren't loaded with salt and butter, but with cooking spray, parsley and lemon.
ELM participant Geraldine Peacock said the meal was wonderful.
Asked if she missed eating corned beef, she answered, "I'm two inches down in the waist. I don't miss it."
Instead of calorie-laden beer, the ELM class had white wine.
If you indulged Thursday, don't feel bad. Be mindful of what you eat 80 percent of the time, and allow yourself to enjoy the foods you love in moderation 20 percent of the time.
