At A Tavola in Winchester, Chef/Owner Vittorio Ettore puts a modern twist on the classic Italian porchetta. "We smoke it to order. And to do that, we have a dome, and then inside the dome we inject smoke," he said. "And then at the table, we lift up the dome and the smoke comes out."

The signature dish at West Bridge restaurant in Kendall Square seems more like a science experiment than a gourmet delicacy: the mysteriously delicious Egg in a Jar.
"It's a super-rich mash potatoes with Hen of the Woods mushrooms that are fried up crispy in a pan. Put that all together with a duck egg that's been cooked for an hour at 63 degrees. Stir it up and go crazy," West Bridge's chef Matthew Gaudet said.
"All the ingredients are layered in a jar. We serve it with a spoon and you have to stir it up to get the full experience. Break the yolk. Get in there," said owner Alexis Gelburd-Kimler.
