Big Game Party Food: BBQ Pork Flatbread
LEXINGTON (CBS) - The Super Bowl is a certainly a big sporting event, but It's also an excuse to throw a party. Paula Ebben got a great idea from Wilson Farms in Lexington.
BBQ Pork Flatbread
(Makes 6 + leftovers)
One 4-5lb. pork shoulder
¼ cup chili powder
6 flatbread
your favorite BBQ sauce
2 cups shredded cheddar cheese
1 cup scallions, chopped
1 cup good beer

Coat pork with the chili powder. Pour beer into a crockpot and add pork. Set for 10 hours and let pork cook. When done, remove pork and let cool slightly.
Preheat oven to 350º
Discard bones, and fat from cooked pork shoulder. Shred pork, place in a bowl, and coat with your favorite BBQ sauce. Once coated, place a single layer of pork on the flatbread. Sprinkle cheese on top. Bake until cheese melts, about 8-10 minutes. Sprinkle with scallions. Enjoy!
