Watching Your Waist On Cinco De Mayo
By Lynne Adkins
PHILADELPHIA (CBS) -- This is Cinco De Mayo, and if you're celebrating, you may want to find out how to make the meal healthier.
What's a celebration without tacos?
Even if you're trying to cut out the fat, you don't have to cut out the taste.
Karen Buch, a registered dietitian with Weis Markets, says a few simple changes will make all the difference.
Some of the things you can do are to fill tacos with lean ground beef or turkey, shredded chicken breast or maybe a flaky white fish, or you can make them meatless. Go with extra firm tofu cubes, soy crumbles or black beans.
Substitute low fat cheese and nonfat plain Greek yogurt on top, using only fresh homemade salsa -- it tastes better and will be lower in sodium. Replace the fried taco with whole wheat or corn and go for the 6 or 8 inch size.
