Bartiromo, who has worked for CNBC for the past two decades, will be the new host of "Opening Bell" weekdays at 9 a.m.
"Everyone here has been unbelievable. They've been so supportive. I'm loving it. It's really been a wonderful place," Bartiromo said of her move to FOX.
"I feel like audiences have changed. For a long time, it was all about the stock market. Today, I think viewers want something very different. I don't think they want to necessarily know just about the stock market and short-termism and trading desk reaction. I think they want to know about technology. They want to know about the energy revolution. They want to know about the global economy. They want more global perspective, and I felt like I wasn't able to do that anymore at CNBC," she said.
"I couldn't see the growth for Maria…[and] at this stage of the game I just couldn't do it anymore," she added.
Bartiromo will also begin hosting a Sunday morning show on the FOX News Channel next month.
"Every Sunday, you see all these politicos on the air…[but] very few of them are actually connecting the dots. It's about the economy. It's about business. It's about creating jobs. When I recognized that and I saw this void in the market, I thought, 'This is perfect for me. This is right up my alley. This is the void I'm going to fill. I'm going to make sure to get business people involved in the conversation on Sunday morning,'" she said.
