Stephanie & Tony's Table: Pasta With Artichoke Hearts And Campari Tomatoes
Ingredients:
6 ounces of fresh pasta
3 ounces chopped red onions
2 ounces of extra-virgin olive oil
4 Campari tomatoes
Six marinated artichoke hearts
6 to 8 pitted Kalamata olives
2 ounces of Italian parsley
Directions:
Drop the pasta and salted boiling water for 2 to 3 minutes. In a sauté pan heat up your olive oil.
Add tomatoes sliced in half and red onions. Simmer for 3 to 4 minutes.
Now add artichoke hearts and olives and let simmer for another two minutes.
Add the pasta. Toss around then serve.
