Cooking With WCCO: Triple Citrus Green Goddess Salad

MINNEAPOLIS (WCCO) – When the weather turns to spring, thoughts turn to lighter cooking. That's why Chef Ashley Mendel, A'viands Chef Manager at St. Gertrude's Health and Rehabilitation Center in Shakopee, is creating summer dish full of citrus flavors.

For this week's Cooking with WCCO, Mendel cooks up a triple citrus salad with green goddess dressing.

 

Triple Citrus Green Goddess Salad

Green Goddess Salad Dressing
2 garlic cloves
3/4 cup mayo
3/4 cup crème fraîche
3 Tbsp chopped chives
1/4 cup chopped fresh parsley
1/2 cup chopped fresh tarragon
2 Tbsp lemon juice
Salt and black pepper to taste

Assemble all ingredients in a blender and blend until smooth. Keep refrigerated until ready to serve.

Triple Citrus Salad
1/2 Orange, supreme
1/2 Blood orange, supreme
1/2 Cara Cara orange, supreme
1/2 Fennel Bulb, thinly slice bulb
1 Handful of fresh Arugula
1/2 Head chopped Radicchio
1/2 Head chopped Boston Bibb

Arrange all of your lettuce in your salad bowl and add Green Goddess dressing. Then finish with sliced oranges. Serve immediately.
