Cantor Mitch Kugel Recipes
SWEET CARROT KUGEL
Yield: 9 servings
INGREDIENTS
1, 12 – 16 ounce package large egg noodles
¼ cup parve margarine or butter
3 eggs, beaten
2 cups carrots, shredded
1, 20 ounce can pineapple rings in juice
15 ounces Ricotta cheese
1 tablespoon vanilla
1 tablespoon cinnamon
1 teaspoon nutmeg
1 cup brown sugar
1 cup bread crumbs
2 cups raisin bran cereal (the crunchy kind) or granola with raisins
DIRECTIONS
- Preheat the oven to 350 degrees
- Grease a 9x9 inch pan
- Cook the noodles according to the package directions and drain
- Place noodles in a mixing bowl and add beaten eggs
- In a separate bowl, combine brown sugar, bread crumbs, cinnamon, nutmeg, vanilla and butter. Mix.
- Place half of the noodles in a layer over the bottom of the pan
- Add a layer of shredded carrots then a layer of Ricotta cheese
- Place pineapple rings on top and drizzle pineapple juice over everything
- Layer the rest of the noodles and pat gently
- Crumble the brown sugar mixture over the top
- Add a top layer of the raisin bran cereal and pat gently
- Bake at 350 degrees for 30 – 40 minutes
- Let cool just a bit for 2 – 3 minutes, cut into squares and serve.
SPINACH MUSHROOM KUGEL
Serves 9
INGREDIENTS
1, 12 – 16 ounce package large egg noodles
½ cup parve margarine or butter, melted
1 package fresh spinach, chopped
4 cups sliced mushrooms
1 cup mozzarella cheese, shredded
1 cup cheddar cheese, shredded
2 tablespoons Italian herb seasoning
1 tablespoon pepper
1 teaspoon salt
3 eggs, beaten
2 cups bread crumbs
DIRECTIONS
- Preheat the oven to 350 degrees
- Grease a 9x9 inch pan
- Cook the noodles according to the package directions and drain
- In a separate bowl, combine spinach, mushrooms, eggs and spices
- Place half of the noodles in a layer over the bottom of the pan
- Add a layer of spinach and mushroom mixture
- Add a layer of mozzarella cheese
- Layer the rest of the noodles and pat gently
- Add a layer of the remaining noodles
- Add a layer of the rest of the spinach mushroom mixture
- Mix the cheddar cheese and bread crumbs together and layer over the top
- Bake at 350 degrees for 30 – 40 minutes
- Let cool just a bit for 2 – 3 minutes, cut into squares and serve.
ZUCCHINI AND RED PEPPER KUGEL
Serves 9
INGREDIENTS
1, 12 – 16 ounce package large egg noodles
½ cup parve margarine or butter
3 eggs, beaten
2 cups zucchini
1 cup red pepper shredded or diced
1 tablespoon cumin
1 tablespoon garlic
1 tablespoon pepper
1 teaspoon salt
2 cups Havarti cheese, shredded
2 cups granola with or without raisins
DIRECTIONS
- Preheat the oven to 350 degrees
- Grease a 9x9 inch pan
- Cook the noodles according to the package directions and drain
- Combine noodles, zucchini, red pepper, cheese, eggs and spices
- Place the mixture into the pan and pat down gently
- Add the granola over the top
- Drizzle the melted butter over the top
- Bake at 350 degrees for 30 – 40 minutes. Let cool just a bit for 2 – 3 minutes, cut into squares and serve
