Most people seem to mistake the highly-celebrated Cinco de Mayo as Mexico's Independence Day, not realizing the true day of independence is known as "Grito De Dolores" on Sept. 16. In 1810, this was the day that in the small town of Dolores near Guanajuato, Mexico, a "cry" recognized the end of the Mexican War of Independence by Miguel Hildago y Castillo.If you plan to celebrate the holiday, we offer you some great dishes and restaurants in your area that will make it perfect.

Mexican Platter (skewers/pinchos)6 Mexican-style skewers: 2 steak, 2 chicken, 2 shrimp. Served with sausage, beans, yellow rice, chips, salsa and pico de gallo (serves 3).
Mexican Chicken SoupMexican style soup with cilantro, onion, cheese, chicken broth, vegetables and chicken breast.
Carne Asada10 and 14 ounce skirt steaks served with roasted peppers, yellow rice and refried beans or house salad.
Addictive Mexican Stew 

This dish can be made with meat or vegan, so that no one is left out. This is one of those dishes that you will want to make in a large pot with a lid, because it will call you out of your sleep and can be eaten for days. For this particular dish, you do not necessarily need to measure everything out — measurements are meant for proportional reasons. Put as much or little of each ingredient that you would like.Ingredients

  • 1 Can of Red Kidney Beans and/or Black Beans
  • 2 Cloves of Chopped Garlic
  • 1 Tablespoon of Olive Oil
  • 1/4 Cup of Tomato Sauce and/or 1 Cup of Chicken Broth
  • 1 Pack of Taco Seasoning
  • 1 Can of Diced Tomatoes
  • One Cup of Onions
  • 1 Bag of Frozen Corn
  • 1 Bag of Frozen Peas
  • 1 Bag of Frozen Green Beans
  • 1 Can of Diced Green Chillies
  • 1/2 Tablespoon of Corn Starch
  • 1 or 2 Cans of Water per Can of Beans (Depending on preferred thickness.)
  • OPTIONAL: Chicken, Steak Cubes, Pork, etc.

Directions

  • Some cook garlic and onions until tender. Others do not.
  • Put everything into a big pot
  • Boil and stir until the contents thicken. They will thicken once removed from the heat.
"Polo Asada" | Roasted ChickenIngredients
  • Olive OIl
  • Lemon Juice
  • Lime Juice
  • Salt
  • Black Pepper
  • Squashed Whole Garlic Cloves
  • Chicken
  • Goya and/or "Tropical Seasoning" may be used.

*Ingredients will vary by amount based on how much chicken and which part of the chicken is being used.

Directions

  1. Combine liquid ingredients.
  2. Place chicken on the bottom of a bowl or glass baking pan.
  3. Pour juices on top of chicken and include additional seasoning at this time.
  4. Put plastic wrap over the top, and let it marinate 2 or more hours, preferably overnight.
  5. Bake or grill chicken thoroughly
  6. Don't eat too much!

  • 1 Thinly-Sliced Orange
  • 1/2 Cup of Tequila
  • 1/2 Cup of Orange Juice
  • 1/3 Cup of Brown Sugar (Adjust to Taste)
  • 1/2 Cup of Triple Sec
  • 1 750mlBottle of Spanish Red Wine
  • Ice

Directions

  1. Mix everything but fruit and ice until you are ready to drink it.
  2. Leave the mixture in your fridge overnight to build up bold flavor
  3. Add Ice for a "Slushy" taste and texture.
  4. Add the fruit as accessory.
